Pesto Bean Salad

This pesto bean topped salad really is the easiest and yummiest salad to make and is perfect for a light main meal or as a side dish to accompany fish or meat. We had this just last night as I had had a few naughty days and was craving something really healthy!

Pesto Bean Salad

I love beans as they are a great alternative to meat, they keep me really full, are super healthy and can be inexpensive to buy. I like adding them to stews, curries and casseroles to bulk them out, so when I stumbled upon this recipe I knew I would love it.

The best thing about this salad is that you can customise it to your taste, you can use as many types of beans (or chickpeas) as you like and add anything you fancy to the salad. I cheated and used a jar of store-bought pesto along with a tin of mixed organic beans which we had on top of a mixture of lettuce, cucumber, tomatoes, onions, carrots, peppers and sweetcorn. You can also add your favourite dressing and top your salad with nuts or seeds for added texture.
