Yummy Pumpkin Curry

As we have an abundance of pumpkins at this time of year, I thought I'd share this easy and delicious pumpkin curry recipe.

Pumpkin Curry

We made this for the first time last year and I'm planning on making it again later on this week.

The great thing about this recipe is its versatility, this appeals to me as I'm not one for carefully following recipes, I prefer to tweak them to my taste. So instead of pureeing the pumpkin, for example, you could just chop it into cubes, you could eat the curry as it comes, or pour over beef, chicken, tofu or vegetables or add a tin of chickpeas as we did last year - if you like chickpeas I would recommend adding them as they go so well with pumpkin, plus they're good for you!
